Hey girls,
Do yall need a new easy recipe to add to your repertoire? Well, here is a long time Lancaster favorite. This recipe to sooo easy AND it's versatile because it can be morphed into at least 3 different meals. It is a chili recipe that is yummy and it tastes like you slaved over it for hours. This recipe can become Frito Pie, Mexican Pile-Up, or Cornbread Casserole, and all three will fill up your husbands stomachs and make'em very happy.
Chili
2 lbs ground beef
1 small onion chopped
2 TBS chili powder
1 small can tomatoe sauce
1 can Ranch Style beans
1 can of Rotel
1 can of water
Salt and Pepper

1. Brown ground beef with chopped onion. Drain grease.
2. In large pot combine all ingredients and let simmer for at least 20 minutes on low to med heat.
Frito Pie
Serve the chili with fritos and GRATED SHARP CHEDDAR CHEESE. The pre-graded bagged isn't nearly as good. This is our favorite one.
Mexican Pile-Up
Serve the chili with corn tortilla chips, lettuce, tomatoe, onion, guacamolie, sour cream, pico, etc.
Cornbread Casserole
In a 9x13 in pan, add the chili to the bottom of the pan. Mix up a LARGE BATCH OF CORNBREAD and pore over the top of the chili. Let the casserole bake according to the cornbread package. Serve with hot sauce on top if you like.

Thank you so much for sharing some dinner ideas that are easy! I love cooking and sometimes I will go through a spell where I don't know what to cook. I can't even remember my regular recipes. Then I will have weeks where I am cooking up a storm. Currently I am stuck for ideas, so this really helps!
